leeks, olive oil, salt, black pepper
Trim and cut 6-8 medium leeks, then wash and dry well to remove any dirt or grit.
Preheat oven to 425 F. Place leeks cut side down on an oiled baking sheet. Drizzle with additional olive oil, then sprinkle with salt and black pepper. Roast for 20 minutes.
