Here's What You'll Need
chicken thighs, za'atar, salt, black pepper, lemons, garlic, olive oil, parsley, flaky sea salt, tahini
Pat the chicken dry. Combine za'atar, salt, and pepper in a small bowl. Liberally season the chicken thighs on all side with the za'atar mixture.
Slice lemons into rounds. Place 3 slices together on a baking sheet. Rest thighs on top. Slice garlic head in half. Place cut side up around chicken, then drizzle garlic heads with about olive oil. Place a slice of lemon on top of each head of garlic.
Cook for 30-35 minutes. Serve immediately with a sprinkle of chopped parsley, a pinch of flaky sea salt, lemon slices, roasted garlic, and tahini (optional).
