10-Minute Greek Yogurt Bark with Fruit & Granola

Greek yogurt bark is a delicious frozen treat that is perfect for kids and adults alike. It's made with a simple base of rich, creamy Greek yogurt, and can be customized with a variety of toppings, such as fresh fruit, nuts, granola, and chocolate chips. With just 10 minutes of prep, this is an easy make-ahead snack that is endlessly versatile.

Ingredients

  • 2 cups whole milk Greek vanilla yogurt
  • 1 cup mixed berries such as blueberries, strawberries, raspberries
  • cup granola or chopped nuts, such as pistachios
  • ¼ cup mini chocolate chips or chocolate shavings
  • Other topping ideas: peanut butter, other nuts (sliced almonds, peanuts, walnuts), sliced bananas, cookie butter, nutella, dried fruit, cacao nibs

Instructions

  • Prepare the yogurt. Line a rimmed baking sheet with parchment paper. Spread 2 cups of vanilla yogurt on top in a flat even layer.
  • Add the toppings. Place 1 cup of mixed berries (cut into equal pieces, if needed) scattered on top, then sprinkle with ¼ cup granola and ¼ cup mini chocolate chips.
  • Freeze the yogurt bark. Transfer to a freezer for 2-3 hours, or until solid, then break into small pieces either by hand or with a sharp knife. Enjoy cold, though we recommend letting it sit out for 15-20 minutes before enjoying. Return leftovers to the freezer until needed.

Notes

  • If using regular whole milk Greek yogurt, sweeten it first with a little vanilla extract and a drizzle of honey.
  • Leftovers can be kept in a freezer safe bag or container for up to 2 months. We recommend leaving the bark out for 15-20 minutes before eating -- it's very cold!
