Finely chop all herbs, then set aside.
Add feta crumbled, chopped herbs, and water (or feta brine) to the blender, then seal. Blend until smooth. If too thick, add water or brine, then blend again.
Transfer feta dip to a bowl, then top with extra herbs, freshly ground black pepper, and nuts, if using. Sprinkle with flaky sea salt, then serve immediately.
