Here's what you'll need
Onion, shallots, garlic, ground lamb, red wine, marinara, ricotta cheese, fresh mint, Kosher salt, black pepper, and pasta
Brown the lamb
Heat oil in a large skillet, then sauté onion, shallots, and garlic. Add ground lamb, cook until browned, then add wine.
Stir in marinara sauce, then mix in ricotta and fresh mint.
Taste and season
Adjust seasoning to taste, then add additional fresh mint.
Serve over pasta
Serve with your favorite pasta, adding a dollop of ricotta on top.
