Here's what you'll need

Rack of lamb, Dijon, panko, goat cheese, rosemary, garlic, grapes, Kosher salt, and black pepper. We're also making a red wine sauce!

Make the red wine sauce

Combine red wine, chicken stock, rosemary, and garlic in a sauce pan, bring to a boil, then  reduce 25 minutes.

Prepare the lamb

Season the lamb, then sear on all sides about 10 minutes. Next, brush with Dijon mustard.

Coat the lamb

Press mixture of goat cheese, panko breadcrumbs, and rosemary on all sides of the rack. Add to skillet with grapes.

Roast the lamb

Cook in a preheated oven for 25 minutes, or until crust is golden brown and lamb reaches an internal temp of 120-125 F.

Allow to rest for 10 minutes, then slice into individual lamb chops. Serve with roasted grapes.
