Cooking Seasonally: Bright, Herb-Forward Meals
By April, I’m ready for my cooking to feel greener, brighter, and a little lighter. Lemon, herbs, seafood, and simple grilled dishes start making their way back into the rotation, even if the weather hasn’t fully made up its mind yet.
These are the recipes I’ll be leaning on all month long—fresh spring meals that still feel satisfying enough for unpredictable April nights.

↓ I will never tire of making chicken piccata. It’s quick, easy, and has such a lovely citrusy flavor. Be sure to finish with capers, which help to balance the sauce!

↓ Thanks to sun-dried tomatoes and lots of basil, this cream sauce doesn’t feel heavy at all. Don’t have access to trout? It’s equally fantastic with salmon filets.

↓ This pasta is both hearty, yet light. I think because it’s finished with mascarpone instead of a heavier red sauce, plus there’s loads of fresh mint and peas—it just feels like spring in a bowl!
