This braised beef chuck roast recipe is so easy and undeniably delicious that I made it 3x in two weeks when I first tested it! The beef is seasoned simply with kosher salt and black pepper, and—the best part!—the oven does all the heavy lifting. It cooks low and slow for about 4 hours until fall apart tender and there’s no searing required; high heat at the end yields ultra-crispy bits, making searing unnecessary.
As far as foolproof, restaurant-worthy beef recipes, this is, without a doubt, the one friends and family request most after trying.
If you happen to have leftovers (it makes a ton!) use the braised pulled beef as a filling for tacos with quick-pickled red onions, added to pasta, or serve it over creamy, garlicky mashed potatoes or Parmesan polenta. Honestly, it’s just as fantastic as a main dish alongside roasted vegetables. You simply can’t go wrong.

Quick Ingredient Overview
I recommend a 4 lb boneless beef chuck roast, which yields 10 generous servings. Look for a roast with plenty of marbling for maximum flavor and tenderness. Thankfully, chuck roasts are a budget-friendly cut of beef, so a little goes a long way.
For a roast that is up to 8 lbs, you can place it directly in a baking dish. If you’re making multiple beef roasts at once, consider placing them together in a larger roasting dish. I do this when I’m hosting summer parties and it works like a dream!

How To Make The Most Tender Braised Beef Chuck Roast
Allow the roast to come to room temperature, which ensures even cooking. Set it on the counter 20-30 minutes before cooking. Up to an hour is fine.
When you season it, be sure to use kosher salt, not table salt (they’re measured differently!). I recommend 2 teaspoons per pound of meat.

Stuffing the roast with garlic cloves was one of my proudest moments during recipe testing. They infuse the meat with a nutty garlic flavor, but then—as an added bonus—when you shred the meat, the meltingly tender roasted garlic cloves get mashed along with the beef. The results are incredible.
Peel a bunch of garlic cloves, then use a paring knife to puncture the beef. Simply press the cloves down into the beef. If the cloves are really large, I’ll cut them in half.

Once the onions, beef, and liquid (water, wine, or broth) have been added, cover tightly with foil, then pop it in the oven.
Slow-cooking is key to achieving a tender and flavorful roast. Once fork-tender (you’re aiming for an internal temp of about 200–205°F), pull the meat with tongs or two forks, then toss with all the juices and onions. Return to the oven uncovered until the top bits are super crispy!

Pro tip: After the roast has cooled (or been refrigerated), it’s much easier to skim off excess fat.
Slow-Cooker Instructions
I’ll be honest: I’m not a fan of slow cookers. I think you’ll always yield better results by simply cooking low and slow in a traditional oven. However, you can follow the same steps outlined in the recipe card, then cook the chuck roast in a crockpot on low for 8 hours until tender.
Finish in the oven as instructed to get those irresistibly crispy bits!

Not A Pot Roast
Although this uses the same cut of meat as a traditional pot roast, the preparation is different. Pot roast typically involves searing the meat first, then braising it with lots of veggies. This recipe is a more versatile pulled beef, perfect for using in a variety of dishes.
I recently used this beef as the filling for homemade crispy fried taquitos and holy yum.

- 3½-4 lb chuck roast, patted dry with paper towels
- 6 cloves of garlic, peeled and cut into half lengthwise
- Kosher salt, about 2 Tbsp
- Freshly ground black pepper, about 1 tsp
- 1 large red onion, thinly sliced into half moons
- ¼ cup water
Instructions
- Preheat an oven to 325°F (165°C). Place sliced red onion on the bottom of the baking dish.
- Prepare the chuck roast. Use a paring knife to cut a few slits into the top and bottom of the chuck roast (the long flat sides), then place the halved garlic cloves inside. Season the beef extremely generously on all sides with Kosher salt and black pepper, about 2 Tbsp salt and 1 tsp pepper. Place on top of the red onions.
- Slow cook the chuck roast. Pour ¼ cup of water around the roast, then cover it tightly with aluminum foil. Transfer to the oven and cook for 3½-4 hours, or until the meat is very tender and shreds easily.
- Shred the meat, then return to oven. Carefully transfer the roast to a large cutting board, then use tongs or two forks to shred the meat. Return it to the baking dish, then toss it with the onion and juices. Increase oven temperature to 425°F (220°C). Cook uncovered for 20 minutes, or until there are lots of crispy bits on top. Enjoy immediately!
Notes
- Serving ideas: Pile onto potato rolls with mayo and pickles, tuck into tacos or quesadillas, or stir into breakfast hash.
- Make ahead & storage: Can be made up to 3 days ahead. Refrigerate up to 4 days or freeze up to 3 months. Thaw overnight and reheat with the braising liquid until warmed through.
- Flavor variations:
- Taco-style: Season with chili powder, cumin, garlic, onion, paprika, and oregano (watch added salt in blends).
- Asian-inspired: Use five-spice or garlic, ginger, soy sauce, sesame oil, and Szechuan pepper.
- Extra richness: Deglaze with red wine or beef broth instead of water.
- In April 2026, I reduced the recommended salt from 3 Tbsp down to 2 Tbsp based on reader feedback. The beef can handle more, but for a 4 lb chuck roast start with 2 Tbsp and adjust seasoning at the end, if needed.

5-Stars for this unique (to me) take on Chuck Roast! I have to admit that Chuck Roast is probably my least favorite cut of meat, although economical and filling, because I believe it can only be successfully prepared as a pot roast, and I am not the biggest fan of pot roast.
When I came upon this recipe however, it piqued my curiosity (what sold me was the roasted garlic that gets shredded in the meat!!) It was also fortuitous because my husband wanted something like shredded taco meat. So I thought, “great! I’ll try this recipe!”
The meat was easy to prepare, and I appreciated that the cook time was pretty hands-off apart from the shredding. Long story long, when that chuck roast came out of the oven after the final crisping, and we piled the meat into homemade spelt flour tortillas, we had one the most delicious rendition of tacos ever! Very healthy, to boot! I had it with pickled jalapeños, YUM!
The only thing I would do differently is let it cook for even longer, as when I was shredding the meat I believe I could have been more tender in some areas, but my husband had just come home, and he was hungry, and frankly I was too, but I heard no complaints that the meat was tough. Will definitely be keeping this in my recipe rotation!!

This recipe was easy and delicious. I didn’t have any cloves of garlic so I had to substitute with garlic powder. Pot roast is a favorite in our house and even better when it’s tender and juicy and paired with mashed potatoes and braised carrots. I appreciate the fact that most of your recipes use things that most everyone has in their fridge or pantry. And when our local butcher had the chuck roast ON a BOGO SALE, it made it economical too! Keep supplying us with recipes for those yummy, easy to make masterpieces!!
