This Month’s Cooking Plan (As I Long For Spring)
March is when my cooking starts to shift. I’m still craving comfort, but I want brightness too—lemon herbs, tender greens, and meals that feel a little lighter without completely jumping headfirst into summer recipes.
This month’s lineup reflects that in-between season: cozy one pot dinners, herb-forward dishes, simple seafood, and just enough freshness to make it feel like spring is finally within reach. And my god, after this insanely snowy winter in New Jersey, we are so ready.
↓ The epitome of comfort food! Every culture seems to have their own version of chicken and rice, and this particular recipe is my family’s favorite.
Zesty One-Pot Lemon Oregano Chicken and Rice
↓ Light, fresh, and beyond simple to make. I love this salmon with spring asparagus and lots of dill.
Tender, Flaky Salmon en Papillote (Salmon in Parchment)
↓ One of my favorite recipes for cleaning out fresh herbs lying around the fridge. Plus, it’s a delightfully fun green color!
25-Minute Mixed Herb Spinach Frittata
↓ A hearty and cheesy (yet light) one pan dinner that’s made with a store-bought rotisserie chicken.
One Pot Creamy Orzo with Chicken & Sun-Dried Tomatoes
↓ This soup is surprisingly good. It’s got a bright acidity and tangy, salty olives. Perfect with crusty bread!
Greek White Bean Soup with Feta & Olives
↓ Whether you’re preparing for Easter, Passover, or simply want to entertain with a seasonal menu, this is my favorite way to enjoy tender roast lamb.
Oven-Roasted Lamb Shoulder with Herb Sauce
↓ A side dish that goes with everything?! Yes, please!
Warm Green Bean Salad with Crispy Potatoes & Feta
↓ This one is just as delicious for brunch as it is for dinner. Serve it up with a light green salad or a bowl of soup and you’re good to go.
Flaky Puff Pastry Tart with Asparagus
↓ The ultimate springtime dessert! And trust me when I say you’ve never had a carrot cake this moist or delicious in your whole life. It’s foolproof.
Impossibly Moist Carrot Cake with Cream Cheese Frosting
March is all about that gentle shift—still comforting, but brighter and just a little greener.
