Calling all breakfast enthusiasts and granola connoisseurs! Eleven Madison Park’s granola is officially the best granola I’ve ever had in my life.
This is nothing new. I was first introduced to EMP’s granola 15+ years ago, when my husband and I began dining there. Note, this was well before they transformed into a vegan restaurant (edit: it’s now 2025 and they once again serve meat. 😂). But I digress… we’re here for one reason: your new favorite granola recipe!
This homemade granola is the perfect balance of sweet and salty with an incredible crunch. The oats stay beautifully, separate—no giant clumps here—and every bite taste like something straight out of Michelin-starred restaurant.

Quick Ingredient Highlights
- Old-fashioned rolled oats are the classic choice, providing good texture and flavor. You can experiment with quick oats for a denser granola or steel-cut oats for a chewier experience.
- Coconut chips: I like Bob’s Red Mill Unsweetened Coconut Flakes—any brand will work, but definitely buy unsweetened, as there’s plenty of sugar in here already.
How To Make Eleven Madison Park’s Granola
The most important ingredient (in my opinion) is kosher salt! It sounds like a lot, and truth be told it is, but this is also what gives the granola its signature flavor. Be sure not to use table salt, which would be overpowering. It truly makes a difference.





You’ll know the granola is ready when it’s golden brown, not burnt bronze.
If you’re a cinnamon lover like me, a sprinkle on top is always welcome. At this point, you’ll stir in dried fruit, and that’s it, you’re done! So the next time you’re looking for ideas for hosting brunch at home, be sure to add this granola recipe.


Serving Ideas
This granola is incredibly versatile—try it over Greek yogurt, sprinkled on fresh fruit, or as a crunchy topping for ice cream (it’s also amazing sprinkled on my Greek yogurt bark with fresh fruit!). Honestly, I often just grab a handful when I’m craving a salty-sweet snack.
Another way to enjoy it for breakfast is to add a splash of milk and voila! Homemade muesli that’s far better than any store-bought cereal.


While you can absolutely customize this to your taste, I highly recommend making it exactly as written the first time—this is the classic Eleven Madison Park granola recipe, and it’s truly perfect as is.
Just remember to keep the proportions of the dry ingredients roughly the same.

Ingredients
- 2¾ cups rolled oats
- 1 cup shelled pistachios
- 1 cup unsweetened coconut chips
- ⅓ cup pumpkin seeds
- 1 Tbsp Kosher salt
- ½ cup packed light brown sugar
- ⅓ cup maple syrup
- ⅓ cup extra virgin olive oil
- ¾ cup sour dried cherries, or dried cranberries
Instructions
- Mix the dry ingredients. Preheat an oven to 300°F (150°C) then line a rimmed baking sheet with parchment paper. In a large bowl, combine 2¾ cups rolled oats, 1 cup shelled pistachios, 1 cup unsweetened coconut chips, ⅓ cup pumpkin seeds, and 1 Tbsp Kosher salt. Mix well.
- Combine wet ingredients. Combine ½ cup brown sugar, ⅓ cup maple syrup, and ⅓ cup extra virgin olive oil in a medium saucepan. Set over low heat then cook, stirring until the sugar has dissolved. Pour directly over the oat mixture, then use a spatula to toss well.
- Bake the granola. Pour the granola mixture onto the prepared baking sheet, ensuring it’s in a single even layer. Bake for 35-40 minutes, stirring once halfway through, or until the granola has dried and turns a light golden brown.
- Add cherries. Add ¾ cup sour dried cherries or cranberries to the granola, give it a toss, then allow to cool completely before transferring to a large storage container.
Notes
- Make ahead & storage: Store granola in an airtight container for up to 2 weeks (if it lasts that long).
- Freezing: Freeze for up to 3 months; thaw overnight in the fridge.
- Tip: Use kosher salt—not table salt—to avoid over-salting.

Amazing! I added dried blueberries, cherries and cut up mangos. I thought it would be too salty but the sweetness of the dried fruit offsets it. I have already doubled the recipe and sent it off to my college kids. Thank you!

I received this as a gift a Christmas and it was just the best granola I have had. I would like to make it myself and was wondering if both the pistachios and pumpkin seeds be salt less.

Hi Anita! Yes, I would use unsalted for this recipe. There is a good deal of Kosher salt that is added (the granola definitely has a salty taste), so using salted ingredients would be overkill. Enjoy! xo, Ari

Not sure what the calorie count is…642 calories I see…but for how much? Certainly not 6 cups…I’m just not seeing the serving size…thanks…getting ready to try this today
This has become a go to recipe. It’s delicious and easy to make. It yielded two 32 fl oz containers which is great. The only change I made was to reduce the salt, but I used Morton’s kosher salt.

I followed the recipe exactly as shown and I will definitely make it again, but… I’ll totally pass on all that salt! I tend to be a light-handed user anyway, so instead of a compliment, I thought it detracted from all the other flavors in the granola. But the core recipe was absolutely worth another go.
