Miso marinated steak tips are just as easy and impressive for a holiday appetizer as they are for a simple, elevated weeknight dinner. Slice your favorite cut of beef (filet mignon, sirloin, or ribeye) into bite size pieces, then toss in a quick miso marinade. After 15 minutes, cook until browned on all sides, then dig in!
It’s really that simple! Here’s why we love these so much:
– No lengthy marinade time! You can start this recipe after a busy work day and still have it on the table in less than 30 minutes.
– The flavor! For such a short marinating time, the steak bites are packed with flavor. The miso paste really gives a lot of flavor. You can’t beat the taste!
– Gluten-free and dairy free! We’re always looking for recipes that can be enjoyed by all guests, regardless of preference or restrictions. Be sure to use tamari in place of soy sauce. These are not lacking in flavor and will leave everyone satisfied.

Ingredients For Miso Marinated Steak Tips
For the miso marinade:
- Miso paste: we use white miso paste, but red miso would work too. White miso is generally less salty than red miso, which is fermented longer and can have a much higher concentrated soy bean flavor.
- Soy sauce: we recommend low-sodium to help control the salt in the dish. Miso paste is already pretty salty. Substitute with tamari to make gluten-free.
- Ginger paste, though you could substitute a 1″ piece of fresh ginger that’s been peeled and grated!
- Mirin or rice vinegar: for acidity
- Granulated sugar or brown sugar: to balance out the salt and acidity in the marinade
- Sesame oil: adds a nutty depth of flavor that is a natural pairing with miso, soy sauce, and ginger!
- Garlic: use fresh garlic, finely chopped, for the absolute best flavor!
- Kosher salt: to season the steak and marinade
As far as the steak, you can use filet mignon (our personal preference), sirloin steak, or ribeye steak. Yes, other cuts of beef will work as well, but the cook time will vary and you may end up with much smaller, thinner pieces if, for instance, you use flank or skirt steak instead.
Garnishes: we love to serve miso marinated steak tips with lots of fresh cilantro and scallions. A squeeze of fresh lime juice (or any other citrus) would fit in nicely too!

How To Make Steak Tips
- Make the miso marinade. Combine ¼ cup white miso paste, 2 Tbsp reduced-sodium soy sauce, 1 Tbsp ginger paste, 1 Tbsp granulated sugar, 1 Tbsp mirin, 2 tsp seasme oil, 2 cloves of finely chopped garlic, and 1 tsp Kosher salt in a medium bowl, then whisk.
- Marinate the steak. Add steak bites, then stir well to evenly coat. Let sit at room temperature for 15 minutes.
- Cook the steak bites. Heat a large skillet over high heat. When very hot, add marinated steak in a single layer, then cook for 4-6 minutes, stirring occasionally, or until browned on all sides, but medium rare in the center. If you prefer steak closer to medium or medium well, cook an additional 1-3 minutes.
- Garnish, then serve! Either transfer the steak to a serving tray or serve directly in the skillet. Sprinkle with thinly sliced scallions and lots of fresh cilantro. Serve immediately.
You can serve steak tips with toothpicks for a fun appetizer or plates (over rice, perhaps?) with forks.

Tips For The Best Miso Steak Tips
Cut the steak into uniform pieces! You want the steak tips to be both bite size, as well as roughly uniform in size. This will help them cook evenly.
Allow the meat to brown and form a crust! Make sure the meat is in a single layer, then cook undisturbed to help brown on all sides. Yes, the sauce will boil and reduce down a bit, which helps to thicken it. This is a good thing!
Don’t overcook the steak! If you’re like us, you enjoy steak cooked to a specific temperature. For medium rare, look for an internal temperature of 130-140F. Cooking the beef tips much longer than the instructions state will lead to overcooked, tough meat.
Garnish with fresh herbs! The flavor of fresh cilantro cannot be beat!

What’s The Best Pan For Cooking Steak?
We recommend either cast-iron skillet, stainless steel, or really anything except nonstick. You won’t get a nice sear otherwise. Also, make sure the pan is over high heat and preheated well before adding the steak!
Best Side Dishes
White rice or coconut rice, blistered shishito peppers (or really any blistered veggies!), or miso eggplant would make great sides! Or serve this alongside our 10 minute spicy ramen noodles — so delicious!
